Our 2017 Wild Garden Shou Mei tea leaves that were grown on a 30 year old wild tea plantation (600-800 meters high) in Guan Yang County, Fuding City, China. This is the same plantation that produced the 2019 Sunlit Forest cake. Compared to our 2019 Sunlit Forest, which uses twigs, large spring leaves, and a few tea buds, this shou mei white tea cake uses only medium to large spring tea leaves from 2017.

This is the lightest and most floral of the shou mei tea cakes that we sourced this year. The warm dry leaves release the aroma of wildflowers, honey and dirt roads. The wet leaves bloom into a stronger floral, honeyed aroma, accompanied by notes of cooked berries. The liquor has an oily texture with a flavor echoes the sweet, rich fragrance of the leaves. This 2017 Wild Garden Shou Mei tea reminds us of humid summer rain, but is warming enough for colder seasons, too.

How do we brew it?

1. Gaiwan Brewing ratio: 1/24   
5 g in a 120 ml gaiwan using 212 F water.

2. Transfer the same tea leaves to a kettle for boiling, we suggest 1/90 - 1/100 ratio. 

5 g tea in a tea kettle with 450 - 500 ml of water.

When you boil tea, the ratio makes a big difference in how your tea will taste. If you are new to boiling tea, we strongly recommend that you start with our suggested ratio of leaf to water. If you are familiar with boiling tea, feel free to play by ear and adjust as you go.
